COV Arrives on the Waterfront in Edgewater Overlooking Manhattan

Taking over the former Pier 115 space at 115 River Road, the new restaurant is called Cov and brings a fresh dining option to the Edgewater waterfront. Blu on the Hudson teased the project earlier in 2026 on Instagram, sharing a video of the waterfront space at 115 River Road with the message “coming soon from the team behind Blu.” The new restaurant has taken over the former Pier 115 Bar + Grill space, a longtime Edgewater spot at the same address. Blu Hospitality Group is the team behind Blu on the Hudson at 1200 Harbor Boulevard in Weehawken and Blu Livingston at 277 Eisenhower Parkway in Livingston.
COV’s menu is designed for sharing, with dishes arriving at the table as they are ready. Diners can expect chilled seafood selections like oysters, scallops, snapper ceviche, and shrimp aguachile, as well as hot bites such as grilled oysters, crispy calamari, fish tacos, and pork belly lettuce cups.
Heartier options include lobster pasta, a ribeye sandwich, lobster rolls, grilled skewers, roasted Maine lobster, and steak frites. The drink menu features creative cocktails, frozen signatures, and a curated selection of wines by the glass.
