New Waterfront Restaurant Opens In Bergen County: Peek Inside

Bergen County’s newest waterfront eatery employs both a beverage director and a culinary director. See new photos.

BERGEN COUNTY, NJ — A new restaurant has opened on the Bergen County waterfront.

Cov — located on the former site of Pier 115 restaurant in Edgewater — opened on July 19. It serves up seafood, pasta, salads, cocktails, and more.

It’s owned by the son of the owners of another waterfront restaurant, Blu on the Hudson in Weehawken.

The eatery is perched on the Hudson River at 115 River Road.

Cov combines the talents of owner Michael Giannopoulos and directors of operations Andrew Christianson and Karl Khambatta.

“Set along the Hudson River with iconic views of the Manhattan skyline, Cov recently opened to much anticipation and is set to become a coveted waterfront escape,” the owners said in a release.

“Designed as the ultimate setting for leisurely lunches and golden hour aperitivos, this vibrant waterfront spot delivers creative menus and lively energy in equal measure.”

The menu, created by Culinary Director Juan Carlos “JC” Ortega, showcases a curated chilled bar and is designed for sharing with ample selections of seafood, pastas, grilled specialties, and more.

Beverage Director Jeremy LeBlanche whips up innovative and interactive cocktails.

“Cov combines exceptional design, impeccable service, and a vibrant atmosphere, transforming Pier 115 into a premier destination,” they noted. “More than just a seasonal attraction, this full-service restaurant features a spacious indoor dining room and a far-reaching alfresco deck that are both available for private events.”
