New Waterfront Restaurant Opens In Bergen County: Peek Inside
Bergen County’s newest waterfront eatery employs both a beverage director and a culinary director. See new photos.
BERGEN COUNTY, NJ — A new restaurant has opened on the Bergen County waterfront.
Cov — located on the former site of Pier 115 restaurant in Edgewater — opened on July 19. It serves up seafood, pasta, salads, cocktails, and more.
It’s owned by the son of the owners of another waterfront restaurant, Blu on the Hudson in Weehawken.
The eatery is perched on the Hudson River at 115 River Road.
Cov combines the talents of owner Michael Giannopoulos and directors of operations Andrew Christianson and Karl Khambatta.
“Set along the Hudson River with iconic views of the Manhattan skyline, Cov recently opened to much anticipation and is set to become a coveted waterfront escape,” the owners said in a release.
“Designed as the ultimate setting for leisurely lunches and golden hour aperitivos, this vibrant waterfront spot delivers creative menus and lively energy in equal measure.”
The menu, created by Culinary Director Juan Carlos “JC” Ortega, showcases a curated chilled bar and is designed for sharing with ample selections of seafood, pastas, grilled specialties, and more.
Beverage Director Jeremy LeBlanche whips up innovative and interactive cocktails.
“Cov combines exceptional design, impeccable service, and a vibrant atmosphere, transforming Pier 115 into a premier destination,” they noted. “More than just a seasonal attraction, this full-service restaurant features a spacious indoor dining room and a far-reaching alfresco deck that are both available for private events.”

Cov Now Open in the Former Pier 115 Space in Edgewater
Edgewater just got a new waterfront dining spot with sweeping Hudson River views and a prime location along River Road. Taking over the former Pier 115 space at 115 River Road, the new restaurant is called Cov and brings a fresh dining option to the Edgewater waterfront. Blu on the Hudson teased the project earlier in 2026 on Instagram, sharing a video of the waterfront space at 115 River Road with the message “coming soon from the team behind Blu.” The new restaurant has taken over the former Pier 115 Bar + Grill space, a longtime Edgewater spot at the same address. Blu Hospitality Group is the team behind Blu on the Hudson at 1200 Harbor Boulevard in Weehawken and Blu Livingston at 277 Eisenhower Parkway in Livingston.
COV’s menu is designed for sharing, with dishes arriving at the table as they are ready. Diners can expect chilled seafood selections like oysters, scallops, snapper ceviche, and shrimp aguachile, as well as hot bites such as grilled oysters, crispy calamari, fish tacos, and pork belly lettuce cups.
Heartier options include lobster pasta, a ribeye sandwich, lobster rolls, grilled skewers, roasted Maine lobster, and steak frites. The drink menu features creative cocktails, frozen signatures, and a curated selection of wines by the glass.

Elegant Bergen County waterfront hotspot opens at former riverfront restaurant site
A new waterfront restaurant has opened along the Hudson River in Edgewater.
Cov has officially opened at 115 River Road, the former home of Pier 115 Bar & Grill, according to northjersey.com.
The upscale concept opened July 19.
The owner is Michael Gianopoulos and Director of Operations are Andrew Christianson and Karl Khambatta.
The menu is built around dishes intended for sharing and includes seafood-focused offerings such as oysters, scallops, ceviche and shrimp aguachile, along with grilled oysters, calamari, fish tacos and pork belly lettuce cups. Larger entrees include lobster pasta, lobster rolls and steak frites.
The menu also features roasted Maine lobster and prime ribeye steak.
Blu Hospitality Group began teasing the project earlier this year, promoting it as a new waterfront concept for the former Pier 115 property.
